Almond Butter Coconut Flour Mug Cake
A soft, moist, delicious mug cake that is ready in less than 20 mins! I love to whip this up before bed so that I can feel nourished and satiated. This happens to be one of my Mom’s favourite recipes. I love peanut butter but she likes to claim that almond butter takes the cake - literally!
Preheat oven to 350 degrees.
In a microwave-safe coffee mug or dish, melt the coconut oil in the microwave for 10 seconds.
Add the coconut flour, sweetener, baking powder, vanilla, almond butter, and beaten egg. Mix well.
Bake at 350 for 15-25 mins (depending on if you want it ooey-gooey or dense.) Microwave on high for 60 seconds if you want a quick cake, and be sure not to overcook. If you overcook it, it will be dry.
Top with nuts, extra almond butter, coconut flakes, or whatever else you desire.
