Imz Avocado ToastšŸ„‘

I am going to be starting this blog off with my favourite breakfasts! Beginning with the infamous Avocado Toast. Avocado Toast is a great way to pack in healthy fats and fibre. If you want to add extra protein, I suggest having it with hemp seeds or eggs.


Ingredients:

  • 1 ripe avocado, halved, pitted and peeled

  • Fine salt and freshly ground black pepper

  • 2 slices whole grain or sourdough bread

  • 1/4 lemon

  • 2 tablespoons extra-virgin

  • Flaky sea salt, for serving

  • Crushed red pepper flakes, optional

  • Balsamic Vinegar(optional)

  • Feta Cheese(optional)

  • Hummus(Optional)


Directions:
1. Mash the avocado with a fork in a shallow bowl until chunky. Add in a squeeze of lemon Season with fine salt and black pepper.

2. Toast the bread until browned and crisp. Spread a thin layer of a hummus of your choice on one side of each toasted bread. Lightly brush the toasts with olive oil, and season with fine salt and pepper. Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.

Sometimes I replace the hummus with chipotle mayo to switch it up. You could also add some cut peppers, tomatoesā€¦ to add texture as well as feta cheese.

Deconstructed.

It is no secret that I tend to get carried away with my toast. So, here is a deconstructed version including some of my favourite toppings! I love adding a thin layer of hummus, sliced avocado, salt and pepper, feta crumbles, egg, sprouts and Alfalfa sprouts!
I also opt to top it of with some Trader Joes ā€œEverything but the Bagelā€ seasoning and drizzle of balsamic vinegar.

I love myself a fancy toast! There are definitely multiple levels to this one. This is why I love toasts, they are easy to layer and pack with nutrients. This one right here is absolutely packed with micro and macronutrients!
