Crumpet French Toast 🤍

DIRECTIONS
Whisk the eggs, milk, cinnamon and honey in a wide, shallow bowl. Add the crumpets and soak for 2 mins on each side.
Meanwhile, prepare the berries, banana, and whatever toppings you would like.
Melt the coconut oil in a nonstick frying pan over medium heat. Fry the crumpets for 2-3 mins on each side until golden brown and piping hot.
Divide the crumpets between 2 plates and smother them with peanut butter. Top with the yogurt, berries, banana slices or whatever else your heart desires.
