Crumpet French Toast 🤍

Try a British spin on classic French toast with delicious cinnamon-spiced crumpets, fried until golden and topped with creamy coconut yogurt, fresh berries, banana, and a smother of peanut butter. This beautiful breakfast is ready in just 10 minutes – perfect for a quick gourmet breakfast in bed or an extra special weekend brunch.

Ingredients

  • 2 eggs

  • 50ml oat milk

  • 1 tsp ground cinnamon

  • 2 tbsp honey

  • 4 crumpets

  • fresh berries

  • 20g coconut oil

  • 100g coconut yogurt

  • Peanut butter

  • banana slices


DIRECTIONS

  1. Whisk the eggs, milk, cinnamon and honey in a wide, shallow bowl. Add the crumpets and soak for 2 mins on each side.

  2. Meanwhile, prepare the berries, banana, and whatever toppings you would like.

  3. Melt the coconut oil in a nonstick frying pan over medium heat. Fry the crumpets for 2-3 mins on each side until golden brown and piping hot.

  4. Divide the crumpets between 2 plates and smother them with peanut butter. Top with the yogurt, berries, banana slices or whatever else your heart desires.
