Pumpkin Spice Oatmeal🍂
I mean… Pumpkin spice and everything nice right? I am definitely one of those personalities that patiently awaits pumpkin spice season when it comes around and milks it until it can’t last any longer. Not only is pumpkin spice delicious but pumpkins are rich in vitamins, minerals and antioxidants, and incredibly healthy. Its nutrients and antioxidants may boost your immune system, protect your eyesight, lower your risk of certain cancers and promote heart and skin health.
I love to start my morning off with nutritious and yummy food so it is only fitting that I present you with a pumpkin spice oatmeal recipe.
Pumpkin and oats are pretty bland on their own. So these extras give it a delicious flavour boost: vanilla, pumpkin pie spice, a pinch of salt, protein, and maple syrup. The almond milk makes it nice and creamy. You can add extras such as maca powder, chia seeds, or flax seeds. I love to add protein as well for a more filling and fuelling breakfast.
Stove top
Add add oats, water, almond milk, pumpkin puree, vanilla, spice and salt, and stir to pot, and stir to combine. (Add protein as well if you are using it)
Bring to a boil over medium-high heat.
Stir, reduce heat, and simmer for about 3 minutes, stirring occasionally.
Stir, remove from heat, and cover for 5 minutes.
Serve with maple syrup and optional toppings (walnuts, maca powder, banana, dates, honey, craisins, apple slices, etc.)
